Experience at Black Marble
Ambiance
Right as you step off the escalator of Raffles Holland V Mall second floor, Black Marble comes right into view. There the daily specials covers a wall in chalk and you find the interior decked out tastefully in black.
Holland V Mall itself is situated at the edge of the bustling Holland Village neighbourhood which plays host to (once) bustling bars and restaurants, towards the residential district. Parking can be found right in the basement.
Mains
At S$150 for 600g, the 45 Days Dry-aged Bone-in Ribeye is a hefty dish but one worth sacrificing your financial sanity for. Dry-aging has lend it a mild sour note and an altogether richer experience. The steak is unleaden by any form of external heavy seasoning, letting the taste of the beef come through clearly.
One steak can be split among four to avoid risk of a serious meat-coma. A rather cute bok choy (Chinese cabbage), roasted garlic, cherry tomatoes, and a roast potato that received a hasselback treatment sans cheese comes on the side.
The actual weight of the cut can differ depending on availability. Price is factored accordingly. The menu lists a range of sauces available, but we were not offered a choice.
Patrons who wish to sample from both the sea and land will be drawn to the Surf & Turf (S$65). A thin seared crust around a medium rare tenderloin lends a bite to the otherwise tender inside. The only setback of the dish comes when you finish your last bite of the humble portions.
Appetizers & Sides
A great start to the meal, tender prawns paired with chunks of coarse chorizo slices in a bed of oil fragrant with the use of dry oddly non-spicy chillies. The result is a bed of flavour perfect to dip the bread or your spoon in just to get another taste of the smoky delight. An additional dash of salt would have brought out the taste more to my liking.
The classic steak pairing brought up a notch. Brining it for a day gave it a silky smooth inside acting as a perfect delivery mechanism for the yuzu mayo. The use of yuzu making for a refreshing side to an otherwise heavy dish.
Dessert & Drinks
Despite coming in at 8.30pm, we could not resist the glass of coffee soda. The drink contains a tartness that wakes you up and a head of foam that sinks ever lower between sips.
As per the staff’s recommendations, we got a sticky dates pudding to round off the night. Crowned with what I believe to be an Earl Grey Ice Cream (menu states vanilla) with candied walnuts laid haphazardly to the sides like fallen knights. Much like how my restraints for popping them into my mouth has fallen.
