The milk tea obsession hold strong in Singapore, and from the posts on Subtle Asian Traits, the Asian community across the globe. This has spawned numerous variations that looked at different pearls, the drink itself, and of course adding alcohol into the solution.

Alcoholic beverages tend to be mildly acidic. That’s the tangy sour flavour I associate with wine or most beers. The acid reacts with fresh milk and curdles it, forming lumps associated with spoilt milk. As you can image that’s not very palatable, and a dilemma for anyone wishing to booze up their drink.

Vodka, gin, and tequila are are found on the lower-end of the spectrum of acidity. Vodka being a preferred choice due to its lack of flavour. An additional alternative is to use an inherently milky alcohol.

Enter Baileys.

The Baileys Irish Cream is an Irish cream liqueur. This means you get both the alcohol together with the ‘milk’ in the form of the cream without any hassle.

Now, all we have to do is get the ratio right. I recommend using a 1:1 ratio as it’s easier to scale things up, but do feel free to tweak it up to your own preference.

You will end up with a cloudy mixture that needs to be mixed thoroughly. If you want a nice froth akin to a teh tarik, you can use a cocktail shaker to add air into the mixture. A protein shaker bottle works fine as well.

One thing to note is that usual milk tea shops use black tea instead of green tea, that’s something to try for the next round.

How would you change up the ratio of baileys to green tea? Let me know in the comments below!
